Warming Kale & Chicken Stir Fry

KALE seems to be flavour of the month at the moment. And why not? According to TCM the bitterness of Kale is great for the liver and it has stomach strengthening and pain reducing qualities also

500g diced organic chicken thigh fillets trimmed of fat

1 sliced brown onion

3 cloves garlic crushed
3 cm piece of ginger grated
4 tablespoons soy sauce
1 tablespoon honey
1 teaspoon peanut oil
1 red capsicum sliced
12 medium sized button mushrooms thickly sliced
1 bunch kale roughly chopped

1) combine soy, garlic, ginger, soy and honey in a small bowl and set aside
2) heat peanut oil in wok, add onion and capsicum until soft
3) add diced chicken thighs and cook through (if you use chicken breast it will dry out)
4) add mushroom until glossy and soft
5) add kale and combined soy, garlic, ginger and honey
6) cook and until kale is wilted.  You can add a splash of water if required

Serve with basmati or brown rice
