This nourishing miso soup with astragalus will help to to support your immune system. In Chinese medicine Huang Qi (Astragalus) root is a herbal tonic used to strengthen qi. While miso traditionally made from fermented soya beans, contains probiotic bacteria to support a healthy gut.
Ingredients:
- 2 Cups of (bone broth, veggie broth)
- 4-5 slices of dried astragalus root (rinse and pat dry)
- 2-3 tablespoons of miso
- 5 Shiitake mushrooms sliced
- 1 Cup of green leafy veggies
- 2 tablespoons of green onions finely chopped
Optional : soft boiled egg, rice noodles
Method:
- Add the broth to your pot
- Add shiitake mushrooms and astragalus (make sure it is rinsed and dried first)
- Cover and let simmer for 10-15 minutes
- Remove the astragalus from pot
- Add miso, leafy greens and green onions (also add the rice noodles and egg if using)
- Stir until miso is dissolved (and until noodles until noodles are soft if using)
