Superfood Salad

This vibrant salad is delicious, healthy and very easy to make. Ingredients such as lettuce, kale and spinach are rich in soluble fibre which is essential for good digestion. These greens also contain lots of Vitamin C, Vitamin K, folate, iron, magnesium and potassium.

Serves 4

Ingredients:

  • 250g kale or cos lettuce
  • Pinch of sea salt and black pepper
  • Lemon juice (1/2 lemon)
  • 1tbs extra virgin olive oil or flaxseed oil
  • 2 handfuls baby spinach leaves
  • 1 bunch parsley, chopped
  • 1 bunch mint, chopped
  • 125g blueberries
  • 1/2 small pineapple, peeled and chopped
  • 1 handful pumpkin seeds
  • 2 handfuls tamari almonds, roughly chopped
  • 1/2C raw sauerkraut or kimchi

For the turmeric dressing:

  • 4tbs extra virgin olive oil or flaxseed oil
  • 1tsp freshly grated or ground turmeric
  • 1tsp fresh grated ginger
  • Lemon juice (1/2 lemon)
  • 1tsp raw honey
  • Pinch of sea salt and black pepper

Method:

Dressing:

  1. Combine all ingredients in a small jar and mix well until combined

Salad:

  1. Wash kale, remove the tough inner stem, shred leaves and place in a large mixing bowl. Add salt, pepper, lemon juice and oil. Massage leaves for 2 minutes or until the kale has slightly collapsed and softened.
  2. Add the spinach, parsley, mint, blueberries, pineapple, pumpkin seeds and almonds. Pour over a little of the dressing and toss gently.
  3. Add the sauerkraut or kimchi over the top. Enjoy!
